Takoyaki Octopus Balls


Ingredients


  • 1 1/2 Cups all-Purpose Flour
  • 2 Cups Dashi Stock (or Water)
  • 1/2 Cup Tenkasu (Tempura Scraps)
  • 1/4 Cup Chopped Geeen 
  • 2 Eggs
  • Bonito Flakes (to Taste)
  • Dried Seaweed (to Taste)
  • 1/4 Cup Beni Shoga (Pickled Ginger),
  • Takoyaki Sauce (to Taste)
  • Mayonnaise (to Taste)


Directions


Step 1
In a large mixing bowl, whisk together the flour, baking powder and salt.

Step 2
  In a separate bowl, beat the eggs and then whisk in the dashi stock until well combined.

Step 3
  Pour the egg mixture into the flour mixture and knead until a smooth batter forms. Leave the batter for 15-20 minutes.

Step 4
Preheat your takoyaki pan over medium heat. Brush each hole in the pan with vegetable oil.

Step 5
  Pour a spoonful of batter into each hole until they are about 2/3 full.

Step 6
  Sprinkle some chopped octopus, green onion and pickled ginger in each batter filled hole.

Step 7
Using a skewer or chopstick, flip the edges of the batter over the fillings and roll the takoyaki until they are golden brown and crispy on the outside.

Step 8
  Transfer the takoyaki to a plate and repeat the process until all the batter and fillings are used.

Step 9
  Top the takoyaki with some takoyaki sauce and mayonnaise and sprinkle with bonito flakes and aonori.

Serve hot and crisp immediately and enjoy the taste.
