How to Make Spicy Tuna Roll
Step 1
Rinse the sushi rice in a fine mesh strainer until the water runs clear.
Step 2
In a medium saucepan, combine washed rice with water and bring to a boil. Lower the heat, cover the pot and simmer the rice for 18-20 minutes or until the water is completely absorbed.
Step 3
In a small saucepan, combine the rice vinegar, sugar and salt. Heat the mixture over low heat, stirring well until the sugar and salt dissolve.
Step 4
Transfer the cooked rice to a large bowl and add the vinegar mixture. Use a wooden spoon or spatula to gently fold the vinegar mixture into the rice, being careful not to break the grains. Allow the rice to cool to room temperature.
Step 5
In a small bowl, combine chopped tuna, mayonnaise and Sriracha sauce or chili oil.
Step 6
Place a sheet of shiny nori seaweed face down on a bamboo mat. To prevent the rice from sticking, wet your hands and spread a thin layer of rice over the nori, leaving a 1/2-inch border at the top.
Step 7
Arrange a line of the spicy tuna mixture horizontally down the middle of the rice and add scallions and any other optional ingredients.
Step 8
Lift the bottom edge of the bamboo mat and use it to roll the sushi into a tight cylinder, tucking in the filling as you go. Use a sharp knife to cut the roll into 6-8 pieces.
Step 9
Spicy tuna rolls served with soy sauce, wasabi and pickled ginger for dipping will taste good.
